Broccoli muffins

Ingredients

– 1 broccoli
– 4dl milk or whipping cream
– 100 g grated cheese
– 100 g all-purpose flour
– Some bacon
– Salt / pepper
– 2 eggs
– 1 big tomato
 
Preparation 
Preheat oven to 180 ° C.
In a mixing bowl, beat together eggs and cream, salt and pepper. 
Add the flour, cheese, cooked bacon, tomato 
and precooked tender broccoli stems. 
Mix well together.
Fill greased muffin cups two-thirds full. 
Bake at 180 degrees C for 18-22 minutes. 
Cool for 10 minutes and remove from pan to a wire rack. 
Serve warm or cold.

You can try also with other veggies like spinach or cauliflower. It looks nice, it’s yummy and I’m sure your kids will love it too!
